As many biodetection assays, especially nucleic-acid based tests, require a more or less complex sample preparation protocol, microfluidics is seen as one of the key enabling technologies to realize the integration of these sample prep protocols with the detection scheme on a single device.

In this work, we will present the fundamentals of Foodomics, discussing the role of this new discipline to solve some current and future challenges in food science and nutrition, and showing several Foodomics applications carried out in our laboratory related to food quality and food bioactivity.
